Day 35: Easy Peasy Summer Salads

Its been wonderful weather here so I’ve been living on salads this week. Very easy, with salads, to give half the plate over to vegetables and also easy to avoid carbs – see days 26 and 33 for more on this.

Key ingredients for easy-peasy salads include… marinated chicken pieces (ready made or home made), mixed bean salad (in a tin or ready made chilled), tinned chickpeas, asparagus (was a lovely addition today) green salad, tomatoes, avocado, grated carrot, cottage cheese, olives, prawns, smoked salmon, cold cooked trout or salmon, peppered mackerel, tinned sardines, nuts, cucumber, lentils (ready cooked in pouch e.g. Merchant Gourmet brand), roasted peppers (in a jar), beetroot, felafels, green beans, boiled eggs, cold steamed broccoli … i’m sure there’s more but this is mainly what I have been eating this last week.

Lunch: Chicken, Bean, Asparagus Salad
